Locked doors only slow intruders down. If someone wants to get into your home they'll pick the lock, break a window, etc. The best locks can offer in terms of security is a delay and possibly noise to alert anyone who's home that there's an intruder, but at least the residents have a good chance of knowing there's an intruder (unless they're very deep sleepers). I don't rely on my locks for home security, and anyone who does is foolish at best. Pet dogs are significantly more effective.
In my understanding, the most common reason to use encryption in chat is to protect the users from the spying eyes of their government; not to protect against the average script kiddie. The problem with this idea is that chat encryption is actually worse than locks on your door, because you believe you are safe when in fact you are not. Not against government surveillance, in any event.
You do you, and if you want to use chat encryption to make it harder that's fine. Just try not to have any illusions about it being secure.
