Most regular AMD and Intel motherboards support running in dual channel mode when an even number of memory modules are installed. They will run in single channel mode when an odd number of modules are detected.
Not sure about the high end motherboards like Threadripper boards and stuff how they handle memory modules exactly as I don't own one. I know they usually support up to 8 or 16 memory modules depending on the motherboard.
Always check to see what your motherboard itself supports as most are documented to work both ways.
