I've been having trouble with Java applications. I can never find the Java Runtime Environment selection when trying to run a .jar file. How do I fix this?

Edit: I've figured out how to run the file via command prompt, but I still cannot associate a double-click action with the JRE I've installed. I had to install Java manually via the .tar.gz method, too, though I was assured that Java 8 came preinstalled... I love this distro, but I'm confused about all this. All help is greatly appreciated!

You can install Java from the repository using the following command:
sudo eopkg install openjdk-8

(You can also just search for "openjdk" in the Software Center and click "Install" there.)

After installing openjdk-8 you should be able to right click on a *.jar file, then choose "Open With Other Application." Click on "View All Applications" then select "OpenJDK Java 8 Runtime." The file association should be set for the future after doing this once.

Install java from repository.

java -jar some.jar. Works fine with Minecraft. As for association that's another story.
