I too have this issue. I believe I have setup everything correctly like the OP. I can not see my SSD upon installation either. This is with an Asus Zenbook UX425. SSD is NVMe Intel SSDPEKNW010T8. I've updated the firmware and no luck.
I was wanting to install alongside Windows 10, so I expanded EFI to 600 MB (originally it was around 220 MB). I enabled AHCI in the BIOS. Disabled secure boot.
I ruled out the Solus-4.2-GNOME Live drive being the issue as I plugged it into another computer and it recognized that laptops (Acer Swift) SSD.
I was able to plug in Kali 2021.1 Live and it recognized my SSD on the Zenbook.
At this point, I'm not entirely sure what the issue is. I may not have a choice but to wait for next release and hope it is fixed.
I'm willing to grab information or try additional steps. My intuition is pointing toward the Intel SSDs or associated firmware. But I make no claim of expertise.
