Also, could I switch to unstable, undergo the epoch now and switch back to stable right away.

There is only one Unstable repository; both Shannon and Polaris are synced from the same Unstable repository. You would probably want to add Polaris instead of Shannon, but I'm not sure I entirely understand the question.
