I've been on the same journey for the past year. So far I have moved my email, calendar, tasks, contacts, and online docs (when needed) to Mailbox.org. I use Mega.nz for online storage. I use Standard Notes instead of Keep. I use Signal for all texting. I use MicroG for LineageOS on my mobile phone and utilize F-Droid for the app store. Unfortunately, I need some proprietary apps for work that are not available on F-Droid. For those I use Aurora Store. WebApps is a good app for containerizing websites on mobile devices.
It is good not to have all your eggs in one basket. I find I do not miss Google in that regard.
I use Firefox as my primary browser with Firefox Containers to compartmentalize my browsing (i.e. banking, shopping, forums, streaming, etc.). I use Brave, and sometimes Tor, for general browsing. I have used both Firefox and Brave for streaming YouTube without any issues. I haven't tried streaming to my television from my computer to know how well Brave or Firefox do compared to Vivaldi. I believe that was the use case your original post was discussing.
For home entertainment, I do use Amazon FireTV. Someday I'll build my own box. I subscribe to the Disney package (Disney, Hulu, ESPN+) and Netflix. I also have an over-the-air HD antenna for local channels when needed. For a while I was subscribing to Hulu with Live TV but found my family was not watching that much television compared to on-demand content. Otherwise that was a good solution. I think it was a better deal than YouTube with Live TV, Sling, or DirectTV Now at the time.
YouTube is the only Google product I can't seem to escape. I use the NewPipe app when streaming on my mobile device; otherwise, I use the YouTube app on the FireTV without signing in. NewPipe is great.
It is sometimes difficult to know how far is too far. When do you come to realize you are wearing a tinfoil hat? I do not know if there is true escape from prying eyes affording complete privacy. As the privacy community suggests, it is about identifying your threat model. What is it you are trying to mitigate? Only then can you determine what actions or products to use to meet your needs. There is no one solution to meet all needs. I think for most people it is about avoiding marketing surveillance.
A few browser extensions (Ublock Origin, HTTPS Everywhere, Decentraleyes, Firefox Containers), browser configuration, and practicing compartmentalization are hopefully effective. You can also use various DNS servers like Adguard DNS at the browser or router level to block ads (includes DNS over https). The downside is that some of the content I enjoy relies on advertisement for funding. Perhaps donations are a fair trade-off.
Amazon has been a great convenience. However, I do intend to improve upon which merchants or services I patronize to improve competition and reduce contributing to Amazon's dominance.
