I wish to upgrade my Wifi card. I've seen in https://getsol.us/articles/hardware/wireless-chipsets/en/ that Intel's 8265 / 8275 cards are known to work. Does anyone have any experience with newer models, e.g. 9560 or AX201?

I don't but usually intel hardware is well supported.
Just type the exact model you are interested in and Linux in your favorite web search engine and you'll get to know if it's supported.
Just know that Solus doesn't support out of tree kernel modules but that's not a concern for Intel WiFi hardware.
