That is a fair question. Fedora does it by having their own Flatpak repo. They had some very public issues, but I will draw that up to learning, and they have sense worked towards improving that.
That said, I think the move towards more immutable has and will continue to improve the process of Flatpaks. I have spoken with a few of the team that reviews new packages and updates. It is a pretty solid system, but still needs more fine-tuning.
I am not sure if I will ever move to an immutable system as my main system, but that is based on what I know today.
