The password not being accepted could be an issue of different keymaps / keyboard layouts during installation and actual bare-metal boot of the installed OS.
No idea what's going on with your encryption issues. Could it be that you somehow accidentally set an empty password? (not sure how that would behave, no prompt or just prompt that only requires pressing Enter)
